What is a HACCP product description?

A HACCP product description is a basic but critical document that gives a full overview of all safety-related characteristics of a product. Its main purpose is to provide the information the HACCP team needs for the first step of the system: hazard analysis (HACCP Principle 1). How to build a complete HACCP product description

  • 1. Product name: the full, exact name. List variants (flavor, size) separately, or make a separate sheet for any variant with different safety characteristics.
  • 2. Ingredients: all raw materials, additives and processing aids, with percentages where needed for hazard analysis. Pay special attention to allergens (milk, soy, nuts, gluten) and high microbiological-risk ingredients.
  • 3. Final-product characteristics: the physical and chemical traits that affect safety and stability - pH, water activity (Aw), heat treatment (sterilization/pasteurization/cooking with specific time and temperature), salt, preservative concentration, viscosity. These set the CCPs and critical limits, so measure accurately.
  • 4. Packaging: the main packaging material (plastic bag, paper box, glass jar, shrink film), whether it directly contacts food, and whether it protects the product. Ensure it is food-safe and does not leach contaminants.
  • 5. Storage conditions: temperature (ambient, chilled, frozen), relative humidity and special needs (avoid direct light, keep dry). The right plastic pallet in cold storage helps cold air circulate and prevents mold.
  • 6. Shelf life: how long the product stays safe and good when stored correctly (production date, use-by, best-before), determined by scientific study and real storage conditions.
  • 7. Distribution method: how the product travels from factory to point of sale (refrigerated truck, dry container, sea/air). This affects transit hazards - consider anti-slip plastic pallets for fragile goods.
  • 8. Intended use and users: how it is meant to be used and by whom, including vulnerable groups (infants, the elderly, the immunocompromised) who need stricter control.
