HACCP Product Description: What It Is and How to Build One

July 3, 2026 - Lê Văn Thăng

What a HACCP product description is and how to build one: name, ingredients, final characteristics (pH, Aw), packaging, storage, shelf life and distribution.

HACCP Product Description: What It Is and How to Build One

Reviewed and updated by ICD - Week 31/2026

Quick summary:

  • A HACCP product description is a foundational document giving a complete overview of a product’s safety-related characteristics.
  • Its purpose is to feed the first HACCP step - hazard analysis (Principle 1).
  • A complete sheet covers product name, ingredients, final characteristics (pH, water activity, heat treatment), packaging, storage, shelf life, distribution and intended use.
  • Storage and distribution choices - including the right plastic pallet - directly affect the hazards a product faces.

What is a HACCP product description?

A HACCP product description is a basic but critical document that gives a full overview of all safety-related characteristics of a product. Its main purpose is to provide the information the HACCP team needs for the first step of the system: hazard analysis (HACCP Principle 1). When all product information is clearly systematized, identifying potential hazards becomes far more accurate. To support hygienic storage, see our food-grade plastic pallets.

How to build a complete HACCP product description

  • 1. Product name: the full, exact name. List variants (flavor, size) separately, or make a separate sheet for any variant with different safety characteristics.
  • 2. Ingredients: all raw materials, additives and processing aids, with percentages where needed for hazard analysis. Pay special attention to allergens (milk, soy, nuts, gluten) and high microbiological-risk ingredients.
  • 3. Final-product characteristics: the physical and chemical traits that affect safety and stability - pH, water activity (Aw), heat treatment (sterilization/pasteurization/cooking with specific time and temperature), salt, preservative concentration, viscosity. These set the CCPs and critical limits, so measure accurately.
  • 4. Packaging: the main packaging material (plastic bag, paper box, glass jar, shrink film), whether it directly contacts food, and whether it protects the product. Ensure it is food-safe and does not leach contaminants.
  • 5. Storage conditions: temperature (ambient, chilled, frozen), relative humidity and special needs (avoid direct light, keep dry). The right plastic pallet in cold storage helps cold air circulate and prevents mold.
  • 6. Shelf life: how long the product stays safe and good when stored correctly (production date, use-by, best-before), determined by scientific study and real storage conditions.
  • 7. Distribution method: how the product travels from factory to point of sale (refrigerated truck, dry container, sea/air). This affects transit hazards - consider anti-slip plastic pallets for fragile goods.
  • 8. Intended use and users: how it is meant to be used and by whom, including vulnerable groups (infants, the elderly, the immunocompromised) who need stricter control.

Why storage and pallets belong in the sheet

Storage and distribution are where many physical and biological hazards enter. Specifying non-absorbent, easy-to-clean plastic pallets in the storage and distribution rows removes a recurring hazard source and strengthens the whole HACCP chain. See what HACCP is for the 7 principles.

Frequently Asked Questions (FAQ)

What is a HACCP product description for?

It systematizes a product’s safety characteristics so the HACCP team can perform hazard analysis (Principle 1) accurately.

What final-product traits must it include?

Safety-driving traits such as pH, water activity, heat treatment, salt and preservative levels - they set the CCPs and critical limits.

Why list packaging and pallets?

Because contact materials and storage surfaces are hazard sources; specifying food-safe packaging and plastic pallets controls them.

Do variants need separate sheets?

Yes, when a variant has different safety characteristics - otherwise one sheet can list them clearly.

HACCP-Compliant Pallet Checklist for Food Manufacturers

Not all pallets meet HACCP hygiene requirements. The comparison below shows why food-grade facilities consistently move away from wood and toward plastic alternatives - the differences in moisture absorption, surface inspection, and sanitation compatibility are not minor. Each row reflects the criteria auditors check during GMP inspections.

RequirementWooden PalletPlastic Pallet (HACCP-Approved)
Moisture absorptionHigh (bacterial risk - wood absorbs liquids and harbors microorganisms)None - HDPE/PP is non-porous
Surface inspectionHidden cracks and splinters trap debris; difficult to inspect visuallySmooth, flat surface - contamination visible at a glance
Sanitation methodLimited - chlorine solution damages wood fibers over timeWashable with 100-200 ppm chlorine solution repeatedly
GMP audit resultUsually flagged as a hygiene risk; requires documentation of treatmentPasses standard GMP checks when surface is intact
ICD availabilityAvailable but not recommended for direct food-contact zonesWhite and green HDPE models available - stock ready

White HDPE pallets are the most common choice in HACCP-certified plants because any contamination - soil, mold, chemical spill - stands out immediately against the light surface. ICD Vietnam supplies food-contact-grade plastic pallets meeting FDA and EU food safety standards. Frequently Asked Questions

What type of pallet is required for HACCP-certified food plants?

HACCP guidelines recommend hard-surface pallets that can be cleaned and sanitized without absorbing moisture or harboring bacteria. In practice, this means plastic pallets made from HDPE or PP are the standard choice for food production and cold chain environments. Wood pallets are porous - they absorb spills and cleaning agents, which creates conditions for bacterial growth that cannot be fully eliminated by surface washing. Many food safety auditors flag wooden pallets in direct-contact production zones during GMP inspections, requiring either replacement or documented justification for continued use.

Can plastic pallets withstand chlorine sanitization used in food plants?

Yes. HDPE and PP plastic pallets tolerate repeated cleaning with 100-200 ppm chlorine solution, which is the concentration range most food facilities use for surface sanitation. The polymer does not degrade or absorb chlorine the way wood does, so the pallet surface remains structurally intact after hundreds of wash cycles. One practical check: inspect the pallet surface for cracks or chips every 6-12 months. Once the surface is no longer smooth, the pallet should be retired from food-contact zones regardless of material.

What color pallet is recommended for food-grade facilities?

White or light-colored pallets are recommended because contamination - soil, mold, chemical spills - is immediately visible on a light surface. This matters for two reasons. First, visual inspection before each use takes seconds rather than requiring close examination. Second, HACCP documentation requires evidence that hygiene checks are carried out; a light-colored pallet makes those checks faster and more defensible during audits. Dark-colored pallets can conceal contamination and make it harder to demonstrate due diligence. ICD Vietnam stocks white and green HDPE pallets suitable for food manufacturing environments.
